Thai Turkey Meatballs

Thai Turkey Meatballs (Gluten Free, Dairy Free, Egg Free)

For someone like me who doesn’t do gluten, eggs, or milk, traditional meatball recipes have become obsolete. Apparently gluten and eggs are what binds them together and milk is what keeps them moist. I can report that this generally seems like the rule of thumb. I have tried and failed to perfect classic beef meatballs more times than I’d like to admit (see: frozen beef meatballs I served with my Penne alla Vodka). So, one night I decided to switch gears, mainly because I had ground turkey in the fridge that was about to expire. Turns out, Thai inspired turkey meatballs are more my tempo. These chic little nuggets were simple to make, compiled of ingredients I already had in my pantry, and turned out perfectly. Treat yourself with gluten free/vegan fried rice from the frozen section to save yourself precious time and energy. I used Grain Trust’s Hibachi Fried Rice.

The Recipe

Total Cook Time: 40 minutes

Servings: 2 - 3

Ingredients:

1 lbs ground turkey

½ gluten free breadcrumbs

3 tbsp sesame oil

3 Tbsp JUST Egg

1 tsp sesame seeds

1/3 cup gluten free soy sauce

4 tbsp sriracha

¼ cup rice vinegar

½ cup sweet chili sauce

4 cloves raw garlic thinly minced

1 tsp salt

1 tsp pepper

1 tsp wasabi (if desired)

1 seaweed snack pack (optional)

20 oz rice (I used Grain Trust’s Hibachi Fried Rice from the frozen section)

The Meatballs

1.       Preheat oven to 400 degrees.

2.      In a large mixing bowl, add ground turkey, gluten free breadcrumbs, JUST Egg, garlic, sesame oil (2 tbsp), salt and pepper.

3.       Using your hands, mix together and roll into meatballs (about 1 teaspoon). Place on a greased baking sheet.

4.       Bake for 11 – 13 minutes. Careful not to overcook.

The Sauce

1.       Heat a skillet over medium heat.

2.       Combine sweet chili sauce, gluten free soy sauce, rice vinegar, sriracha, sesame oil (1 tbsp) and wasabi in a mixing bowl.

3.       Adjust accordingly per desired sweetness or spice.

4.       Add to heated skillet and stir.

5.       Once meatballs have finished baking, add to sauce and coat generously.

The Rice

1.       To save a little time, I used Grain Trust’s Hibachi Fried Rice. It comes frozen and only takes about 7 minutes to thaw on a heated skillet. You can also serve with white rice or noodles. Sprinkle seaweed snack on top for extra color and texture.
