Vegan Spinach Artichoke Dip
I’ve always had an affinity for spin dip. How can you not? But for those of us migrating away from animal products (or even simpler, cheese high in lactose) it’s not exactly on the list of things we should eat. And if you’ve ever sampled the packaged versions located in the vegan section of the grocery store, you know its just not the same. So, I experimented. For anyone who has a pulse, you know you can’t actually replicate the heavenly goodness that is REAL MELTED CHEESE but allow me to offer this alternative. For what it's worth, my boyfriend couldn’t keep his hands off of it and at the very least, it’s better than any vegan rendition you could buy at the grocery store. Commence affinity for spin dip.
The Recipe
Total Cook Time: 20 – 30 minutes
Servings: 4 - 6
Ingredients:
1 cup onion
2 cups spinach
1 can (10 – 12 count) artichoke hearts
3 garlic cloves
8 oz vegan cream cheese (I would normally choose Violife’s cream cheese but Kite Hill’s is also delicious)
1 cup vegan mayo
2 Tbsp brown seed mustard
1 tsp paprika
Salt and pepper to taste
Instructions:
1. Chop onion, garlic, spinach, and artichokes.
2. Heat large skillet on medium heat and add 2 tablespoons olive oil.
3. Add the chopped onion and a few dashes of salt. Cook until translucent.
4. Add garlic and sauté (about two minutes).
5. Add artichokes. Add spinach and cook until wilted. Set aside and allow to cool.
6. In a large mixing bowl, combine vegan cream cheese, vegan mayo, paprika, and brown seed mustard.
7. A cup at a time, fold spinach mixture into large mixing bowl. Add salt and pepper to taste.
8. Chill 2 hours before serving.
