Impossible Vegan Quesadillas (Gluten Free)

These quesadillas are some next level Taco Tuesday shit. They’re so quick and simple to make and taste incredible. Next time you’re in a time crunch but also wanting to avoid the drive-thru, give these vegan delicacies a try!

The Recipe

Total Cook Time: 20 minutes

Servings: 4

Ingredients:

6 – 8 Gluten Free Tortillas (I prefer Mission’s gluten free tortillas)

1 package ground Impossible Meat

1 jalapeno

½ cup diced onion

1 tsp Tajin

1 package (8 oz) Violife Cheddar

2 tbsp vegan butter (I use Earth Balance)

1 tsp salt

1 tbsp avocado oil (Easily substituted with olive oil or coconut oil)

Instructions:

1.       Heat a large skillet over medium high heat with avocado oil.

2.       Thinly dice onion and jalapeno. Add to heated skillet with salt and Tajin. Sauté for about 3 minutes.

3.       Add ground Impossible Meat and cook until browned.

4.       Remove meat mixture from skillet into a bowl and lightly wipe down the skillet.

5.       Place skillet back on medium high heat and add vegan butter, allowing it to melt completely and sizzle.

6.       One at a time, add a tortilla to the skillet. Sprinkle a little cheese on half of the tortilla as well as some of the meat mixture.

7.       Using a flat spatula, fold the empty half the tortilla over your mixture and allow the quesadilla to lightly brown underneath. This usually only takes a minute or two. Carefully flip and repeat.

8.       Sprinkle a dash of Tajin over cooked quesadillas for added color and tang.

9.       Serve with salsa, guacamole, and a chilled Topo Chico.
